Incorporar el azúcar, cucharada a cucharada, para obtener un merengue lustroso. Retirar el chocolate de la cacerola y añadir 1 cucharada colmada de merengue con movimientos envolventes, añadir el chocolate en el merengue y envolver suave y constantemente. Agregar la nata montada y dos terceras partes del chocolate rallado con el mismo movimiento. Dividir en 6 tazas y enfriar 2 horas o toda la noche.<br />3. Batir las claras a punto de nieve, incorporar el azúcar poco a poco sin dejar de batir. Con una cuchara, poner encima de las bandejas 8 montoncitos de merengue con un pico en el centro. Cocer hasta que estén crujientes, sacar y dejar enfriar.<br />2. Trocear y fundir 85g de chocolate. Colocar el puré de castaña en un cuenco, verter el ron y el chocolate y remover. Montar la mitad de la nata, incorporarla en la mezcla de castaña y refrigerarla hasta que este firme.<br />3. Disponer la mezcla de castaña sobre los merengues y colocarla y encima de la castaña como copos de nieve. Con un molde redondo y acanalado de 5cm de diámetro confeccionar 24 círculos; con la boquilla de una manga pastelera eliminar el centro de los círculos. Pasarlos a bandejas de horno. Hornear. Dejar enfriar.<br />2. Mezclar la crema de limón con dos cucharadas de agua hirviendo. Tamizar encima 175g de azúcar glasé y remover. Mezclar la mermelada con dos cucharaditas de agua hirviendo y tamizar encima el azúcar glasé restante.<br />3. Poner glaseado de limón sobre las galletas y un poco de azúcar rosa. Dejar 20 minutos para que se endurezca.</span></span></div>
